Things to do – driving from Brisbane to Melbourne

My fiancé and I (from UK) are planning to take a road trip from Brisbane to Melbourne, passing through Sydney, next year around the end of Feb-beginning of March. Drip duration of around 3 weeks. Just looking for some general advice on must-see sights, best places to stop, good beaches, any excursions that are really worth the money, cool spots, etc. Will we miss the school summer holidays going at that time? (Price of flights & car hire would suggest so) Will it still be warm enough at night to sleep in a minivan? How does the climate change as you travel down the coast? Is there anything/where we should absolutely avoid? Im in my late 20s and my fiancé is in his 40s so were not really looking for raves or crazy night life, more like scenic walks, heritage sites, outdoor activities, peaceful beaches, hikes and so on.

Were planning to take the coastal route and have checked out one-way rental prices, which are no where near as expensive as when we drove Route 66 one-way! Ive been to Melbourne in April and it was lovely and just starting to feel autumnal (bit chilly at times though). Neither of us have visited other parts of Australia though. Were pretty experienced travellers/road-trippers/backpackers so we know the main pitfalls etc, but if you have any tips to share, Id love to hear them. Thanks!
